Eggie Dish
I am occasionally asked for recipes of food that I make for church events. It seems the easiest thing would be to publish them online!
On Wednesdays we run PJ’s Lunch Club in Kirkley Parish Hall. It’s a popular lunch and linger for people in the community. We gather from about 10:30 and lunch is served at about noon. Our incredibly talented kitchen people prepare, cook, and serve amazing food. All nourishing, healthy meals made from responsibly sourced, quality products.
One day, I heard myself offer to cook my “eggie dish”. John and I often eat this for breakfast, but it is equally suitable for brunch or lunch (or any time you feel like it!)

Recipe for two people:
In a 5x6.5” oven-proof dish layer:
The mixture rises impressively in the dish but sinks after taking it from the oven. It’s disappointing, but it still tastes delicious. It reheats well too at 160°.

In a 5x6.5” oven-proof dish layer:
- a sliced tomato
- spinach leaves
- grated cheddar cheese
- 3 eggs
- ½ cup milk
- ¼ cup cream
- ¼ cup Kefir (if you don’t have Kefir, use plain yoghurt or milk)
- frozen ginger
- frozen chilli
- frozen chopped coriander
- asafoetida (can be found in Indian stores, also Sainsbury’s sell it!)
- ground turmeric
- ground cardamom
- ground cumin
- ground black pepper
- (I don’t add salt because I find there is enough saltiness in the cheese)
